So this is naughty, it’s a treat, we gotta say that from the off, it’s also a sort of food hack… – Unicorn fudge! We are calling that simply because Phoebe likes unicorns and also it’s very, very colourful. It’s fudge in the loosest sense, a little bit more of a 2 ingredients white chocolate fudge, but it’ll work none the less. Warning though it is a little temperamental working with white chocolate, here’s two tips.
- Make sure that you melt the chocolate but only to the point that the chocolate has still got little lumps it in, using the residual heat to stir and fully melt through. If you overheat it, which is very easy to do either over the stove or melting in the microwave on blasts, don’t over do it.
- White chocolate is best dyed using oil based food dye, that will not upset it. You don’t want it to seize. That’s why you only really need a trickle of the water based extract flavouring too really.
That said, here we go. To make unicorn fudge simply melt up your white chocolate in a mixing bowl with the cream. Do not overheat it as said above, melt it either in a microwavable bowl on short blasts or over a pan of simmering water until small white chocolate lumps are there and then stir through to blend so you have a consistent mixture. Drop in a little strawberry extract (say a tsp) then mix briefly, and pour it quickly into a small lined baking tin – the smaller the tin, the higher the fudge, or you could stack it and make it in layers.
Before placing in the fridge drop some of the oil based food dye into the chocolate, swirl with a bamboo skewer to create a tye-dye effect through then smooth off and press the sprinkles into the top of the fudge. Chill for a good 50 minutes at least to firm up. Allow to drop to room temperature before serving up and slicing into small squares. Perfect for a party and definitely sharing! Good luck 🙂
